Roasted Winter Veggies

Veggies:

*This recipe is super versatile. Mix and match your favorite winter veggies. These are the ones I had on hand:

1 Yellow Onion

2 Cups Brussel Sprouts 

2 Sweet Potatoes 

4 Medium Sized Beets

6 Whole Large Carrots 

3 Whole Parsnips

Toppings:

1/2 Cup Avocado Oil

4-6 Cloves Garlic

1/2 TBSP Basil 

Sea Salt and Black Pepper to Taste

*Optional: Crushed Red Pepper To Taste

1.    Wash and chop all veggies & the onion into medium sized pieces. 

2.    Place in a roasting pan. Drizzle with avocado oil. Chop garlic cloves into medium sized pieces and mix into pan. 

3. Heat oven to 375 degrees. Bake for 30-40 minutes.
